Dimitri’s was a landmark pizzeria on Crown Street, and when Ken Williams and Drew Huston chose to move premises to Oxford Street, they did so for the best of reasons: food quality and customer experience. The larger premises have allowed them to install a traditional woodfired oven, and space for an upstairs bar and roof garden, which is still being developed.
But it’s not just the premises that have changed, the pizzas are now 100 per cent sourdough and made in the traditional style with the woodfired pizza oven taking centre stage at the rear of the venue. Pizza options include Brussell Crowe and Jo Formaggio, and feature exciting Italian and local Australian ingredients. You can pair your pizza of choice with their thoughtful selection of craft beers and hand-picked wines.

We chose to shoot Dimtri’s Pizzeria at night to show off Ken and Drew’s exciting new interior at its best. Our proprietary HDR process allowed us to capture all of the lighting from neon ropes to the backlit signage, without blowing out the highlights or introducing heavy digital noise in the low-lit areas.
